天然活性成分绿原酸的理化性质

绿原酸又称咖啡单宁酸，是一种稳定性较低、易异构化极性有机酸，在植物体内主要通过有氧呼吸中的莽草酸途径产生，其产生的绿原酸通常为混合物，如绿原酸甲酯、绿原酸乙酯、单咖啡酰奎尼酸。

其化学名为3-O-咖啡酞奎尼酸，分子式为C16H18O9，分子量354.30[6]。绿原酸在常温时溶解度仅为4%，熔点为208 ℃,当温度为110 ℃时会形成无水化合物，其半水化合物为白色或淡黄色针状晶体，

易溶于有机溶剂（如乙醇、丙酮、甲醇等），微溶于乙酸乙酯，难溶于苯、乙醚和氯仿等。
